Stuffed OPO Squash/Doodhi/Bottle Gourd
OPO Squash Stuffed with Paneer mixture.
Paneer Stuffed Lauki/Squash/Bottle Gourd is a classic side dish made by stuffing the bottle gourd with a mixture of paneer, onions, tomatoes and spices and then served with a rich and creamy tomato based gravy. Ingredients
OPO Squash/Lauki/Bottle Gourd - 1 small size
Oil - 2 tsp
Cumin Seeds - 1 tsp
Onions - 100 gms
Tomato- 200 gms
Ginger Garlic - 1.5 tsp
Paneer - 100 gms
Turmeric Powder - 1 tsp
Chilli Powder - to taste
Salt to taste
Method of preparation
Step 1 - Steam the Lauki/OPO squash/Bottle Gourd/Doodhi
Peel the Squash
Slit it in the center making sure you do not completely cut it
Steam until cooked Al dente.
Step 2 - Make the stuffing
In a wok, add oil, cumin seeds and wait for 30 seconds
Add Onions and saute for 1 minute
Add Ginger Garlic Paste and saute for 30 seconds
Add Tomatoes and saute for 1 minute
Add your spices (turmeric and chilli powder) and saute for 30 seconds
Add the paneer and cook for 30 seconds
Add salt to taste and mix well
Set aside.
Step 3 - Stuff the Lauki/OPO squash/Bottle Gourd/Doodhi
Remove the seeds from the center of the squash to make a hollow.
Add the stuffing in the center
Set aside
Step 4 - Make the gravy and plate
Blend the remaining stuffing with little water
Plate the stuffed squash
Pour the gravy on top and side
Cut into thick rounds and serve
