Ingredients

  1. Mini Sweet Peppers - 1 lb / 450g

  2. Goat Cheese - 8 oz / 227g

  3. Jeera / Cumin Powder - 1 tsp

  4. Chili Powder - 1 tsp or to taste

  5. Turmeric Powder - 1/2 tsp

  6. Spinach, chopped - 50g


Method of Preparation

  1. Pre-heat the oven to 350F (175C).

  2. Cut the tops off the mini sweet peppers and scoop out the seeds.

  3. In a bowl, mix together goat cheese, jeera / cumin powder/ chili powder, turmeric powder and spinach.

  4. Stuff the goat cheese mixture into the mini sweet peppers. Make sure that the stuffing goes right in.

  5. Place the stuffed mini peppers in a prepared baking tray.

  6. Bake for 8 to 10 minutes

  7. Cool and enjoy!
