Mini Sweet Peppers - 1 lb / 450g
Goat Cheese - 8 oz / 227g
Jeera / Cumin Powder - 1 tsp
Chili Powder - 1 tsp or to taste
Turmeric Powder - 1/2 tsp
Spinach, chopped - 50g
Method of Preparation
Pre-heat the oven to 350F (175C).
Cut the tops off the mini sweet peppers and scoop out the seeds.
In a bowl, mix together goat cheese, jeera / cumin powder/ chili powder, turmeric powder and spinach.
Stuff the goat cheese mixture into the mini sweet peppers. Make sure that the stuffing goes right in.
Place the stuffed mini peppers in a prepared baking tray.
Bake for 8 to 10 minutes
