Protein Rich Chocolate Squares/Barfi
No cook, diabetic friendly, protein rich chocolate barfi
Barfi or Burfi is a very sweet Indian candy — similar to fudge, but slightly earthier and more milky. This is typically made with some combination of milk, sugar, ghee and flavorings. In this recipe we have maintained the taste and creaminess of the barfi, amped up the protein content, added additional healthy fats such as almonds and walnuts and made it no cook to boot. Makes: 10 Barfis / Squares
Prep Time: 10 mins
Walnuts - 1/4 cup
Almonds - 1/4 cup
Chocolate Protein Powder - 1/2 cup
Ghee - 1/4 cup or as required
Sweetener of Choice (Optional) - 1/4 cup (in case you want it sweeter)
Method of preparation
Add walnuts and almonds to a food processor or grinder and grind them.
Add the chocolate flavored protein powder and ghee and pulsate slowly until it all comes together. The mixture should leave the food processor easily and you should be able to mold it easily.
Add this to a bowl and add sweetener if you desire.
Add parchment paper to a tray and spread the mixture evenly.
Refrigerate for 10 minutes
Cut squares and store it in an airtight container in the refrigerator for upto 7 days.
Don't have walnuts or almonds? You any combination of nuts you like.
The mixture is not binding? Add ghee 1 tbsp at a time and grind till the mixture comes together.
Unable to cut squares after refrigerating? Just keep the tray out at room temperature for a couple of minutes before you cut.
