Okra in Asian Sauce

A quick vegan appetizer or a side.

This recipe is nutritious, healthy, absolutely delicious and can be made in under 5 minutes with just a few ingredients. Okra is often a forgotten vegetable as people don't like its slimy texture and the fact that it absorbs too much oil. Boiling the okra helps removes the slimy nature of the vegetable and also cooks it ensuring we don't use much oil. Make this recipe as a side or serve as an appetizer and it is sure to be a big crowd pleaser.

  1. Okra - 200 gms

  2. Oil - 2 tsp

  3. Minced Garlic - 1 tbsp

  4. Minced Ginger - 1.5 tsp

  5. Soy Sauce/Liquid Aminos: 1 tbsp

  6. Chilli Sauce - 1 tbsp

  7. Water - 1/2 cup

  8. Spring Onions - 1 tbsp (for garnishing)

Method of preparation

  1. Cut the tops off the Okra. Set aside

  2. In a pan, bring water to boil

  3. Add the Okra to the water and boil it for 3 minutes (ensure you do not over boil the Okra, you want it to have a slight bite to it)

  4. Remove the Okra from the water and set aside

  5. In a pan add oil, ginger and garlic and saute for 30 seconds

  6. Add the soy and chilli sauce and saute for 30 seconds

  7. Add half a cup of water and bring to boil

  8. Pour this hot and tangy mixture over the Okra

  9. Garnish with spring onions

  10. Enjoy
