Low Carb & Keto Friendly Yogurt/Curd "Rice"

Curd rice, also called yogurt rice, is a dish originating from India. The word "curd" in Indian English refers to unsweetened probiotic yogurt. It is most popular in Southern India. In most household your meal is not complete without having some curd rice. Here we have maintained the flavors of curd rice but have removed the carbs associated by replacing rice with riced cauliflower. This is a must try recipe!

  1. Cauliflower Rice: 3/4 Cup

  2. Oil - 1 tsp

  3. Greek Yogurt/Hung Curd - 1/4 cup

  4. Curry Leaves - a few leaves

  5. Mustard Seeds - 1/4 tsp

  6. Green Chilli - 1 or to taste

  7. Asafoetida/Hing - a pinch

  8. Salt to taste

Method of Preparation

  1. In a pan add the oil and wait for it to get warm

  2. Add the mustard seeds and saute for 30 seconds

  3. Add the green chilli, salt and asafoetida/hing and saute for 30 seconds

  4. Add the curry leaves and saute for 30 seconds

  5. Add the cauliflower rice and cook till dry

  6. Cool and add the yogurt

  7. Mix well and enjoy
