Lemon Flavored "Rice"

Lemon rice is widely prepared in South India. This dish can be eaten hot or cold and hence is ideal for any situation. Traditionally, this item is prepared with rice, oil, spices and of course lemon juice. In order to be more mindful of our eating, we have reduced the oil used significantly and replaced rice with riced cauliflower. On a blind taste test at the MC headquarters, several people could not distinguish the original Vs the low carb mindful version. Do try this recipe and let us know what you think.

  1. Cauliflower Rice: 3/4 Cup

  2. Oil - 1 tsp

  3. Peanuts - 1 tbsp

  4. Curry Leaves - a few leaves

  5. Mustard Seeds - 1/4 tsp

  6. Turmeric Powder - 1/4 tsp

  7. Asafoetida/Hing - a pinch

  8. Lemon Juice - 1-2 tsp

  9. Salt to taste

Method of Preparation

  1. In a pan add the oil and wait for it to get warm

  2. Add the mustard seeds and saute for 30 seconds

  3. Add the turmeric, salt and asafoetid/hing and saute for 30 seconds

  4. Add the peanuts and curry leaves and saute for 30 seconds

  5. Add the cauliflower rice and cook till dry

  6. Cool and add lemon juice

  7. Mix well and enjoy
