Tangy Cauli"Rice"

Tomato Rice is a famous South Indian recipe. It is a delicious and easy to prepare . The tomatoes are sauteed with spices and then added to rice. Here we have replaced the rice with grated cauliflower. Alternatively, you can also use shredded cabbage instead of cauliflower. The tangy flavour of tomato makes it a scrumptious dish. This is a perfect meal to take to a picnic or to work. Drizzle ghee on top and enjoy it with some hung curd.

Ingredients

  1. Tomatoes - 1/2 cup

  2. Ghee - 1 tsp

  3. Mustard Seeds - 1 tsp

  4. Green Chilli - 1 - 2

  5. Hing - 1/4 tsp

  6. Chilli Powder: 1/2 tsp (Adjust per your taste)

  7. Turmeric - 1/2 tsp

  8. Cauliflower Rice/Grated Cauliflower - 300 gms

  9. Coriander/Cilantro - For Garnish

Method of Preparation

  1. Chop Tomatoes and keep aside.

  2. Cut the Green chill and keep aside.

  3. In a wok/kadai add the ghee and wait till hot.

  4. Add the mustard seeds and wait till it stops sputtering.

  5. Add the tomatoes, green chilli, hing, turmeric and cook till it becomes dry.

  6. Now add the Cauliflower Rice and salt and cook for about 3 mins or until cooked.

  7. Garnish with coriander/cilantro leaves.

  8. Drizzle with ghee and have this yummy dish hot.
