Low Carb/ Keto Bottle Gourd Raita

A refreshing low carb salad or side dish

This raita is a refreshing yogurt-based dish made with spiced Lauki and yogurt. Lauki is also known as b gourd, OPO squash, doodhi, ghia. This raita is low carb, healthy and tastes delicious. Serve this as a side dish or enjoy as a salad.

  1. Lauki - 150gms 

  2. Greek Yogurt or Hung Curd - 120 ml or 1/2 cup (Preferably use the full fat version)

  3. Roasted zeera powder - 1/2 tsp

  4. Green chilly - 1, finely chopped

  5. Mint leaves - 4 to 5 leaves, finely chopped

  6. Ghee - 1tsp (For tempering)

  7. Zeera/Cumin - 1/4 tsp

  8. Salt - to taste

Method of preparation

  1. Peel and Grate the Bottle Gourd/OPO Squash/Doodhi

  2. Saute it in very little water adding salt for about a minute 

  3. Cool it

  4. Combine it with the yogurt.

  5. Add water to adjust consistency

  6. Add zeera powder, salt, green chilly, chopped mint

  7. For tempering - Heat ghee, add zeera and add it to the Raita
