Low Carb/ Keto Bottle Gourd Raita

A refreshing low carb salad or side dish

This raita is a refreshing yogurt-based dish made with spiced Lauki and yogurt. Lauki is also known as b gourd, OPO squash, doodhi, ghia. This raita is low carb, healthy and tastes delicious. Serve this as a side dish or enjoy as a salad.

Ingredients
Lauki - 150gms
Greek Yogurt or Hung Curd - 120 ml or 1/2 cup (Preferably use the full fat version)
Roasted zeera powder - 1/2 tsp
Green chilly - 1, finely chopped
Mint leaves - 4 to 5 leaves, finely chopped
Ghee - 1tsp (For tempering)
Zeera/Cumin - 1/4 tsp
Salt - to taste
Method of preparation
Peel and Grate the Bottle Gourd/OPO Squash/Doodhi
Saute it in very little water adding salt for about a minute
Cool it
Combine it with the yogurt.
Add water to adjust consistency
Add zeera powder, salt, green chilly, chopped mint
For tempering - Heat ghee, add zeera and add it to the Raita
