Yogurt based stew

Kadhi is another common dish from the Indian sub-continent. Its main ingredients in any kadhi are yogurt and chickpea flour (besan). There are many variations of this yogurt based stew. Depending on the region of the Indian sub-continent, the spices slightly vary. For example, if one hails from the western region, the yogurt gravy is slightly sweet and the same gravy becomes more spicy if you are from up north. To adapt this recipe to a more low-carb version, we have used Greek yogurt and changed up the chickpea flour to coconut flour and kept the flavor very neutral with basic tempering which in our opinion makes this dish extra delicious. Try this recipe as is, or adapt it to your taste by changing the spices.

Ingredients
Greek Yogurt - 1/2 Cup
Water - 1 cup
Coconut Flour - 1 tsp
Ghee - 1 tsp
Cumin/Jeera Seeds - 1 tsp
Astofodia - 1/4 tsp
Red Chillies - 2-3
Curry Leaves - Few
Cloves - 2- 3 pods
Salt to taste
Method of Preparation
In a bowl mix the Greek yogurt, water, coconut flour and salt with a whisk and keep aside
In a pan add oil/ghee and wait for it to get warm
Add all the spices including the curry leaves and wait for it to stop sputtering
Add the yogurt-water - flour mixture to the tempering and mix well and lower the flame
Bring it to a boil and shut the flame
Transfer to a bowl and enjoy with your Roti or Rice
