Keto Upma - A Low Carb Diabetic Friendly Cauliflower Rice Dish

A quick and easy breakfast idea

Upma, uppumavu or uppittu is a dish originating from the Indian subcontinent, most common in South Indian, Maharashtrian, and Sri Lankan Tamil breakfast, cooked as a thick porridge from dry-roasted semolina or coarse rice flour. Here we have replaced the carb laden ingredient and replaced it with Cauliflower Rice making it low carb, tasty and satisfying. Have this with your Bullet Proof Coffee and you have a wholesome breakfast.

Ingredients

  1. Grated Cauliflower: 300 gms

  2. Ghee / Coconut Oil - 1 tsp

  3. Mustard Seeds - 1 tsp

  4. Asafoetida - 1/2 tsp

  5. Turmeric Powder - 1 tsp

  6. Curry Leaves - A few

  7. Ginger (grated) - to taste

  8. Salt to taste

Method of Preparation

  1. In a pan add the Ghee and wait for it to get warm

  2. Add the mustard seeds, asafoetida and turmeric and saute for 30 seconds

  3. Add the curry leaves and ginger and saute for 30 seconds

  4. Add the grated cauliflower and saute for 2-3 minutes

  5. Add salt and mix well.

  6. Enjoy this your Bullet Proof Coffee

Variations

Add any other vegetables like tomato, onion, green beans
