Who doesn't love chaat? Unfortunately, the basic ingredients that go into making a good chaat, like sev, puri, potato and even Khata Meetha Chutney (Tamarind and Date Chutney) and far from being Keto.
Tokri Chaat or edible baskets filled with a mixture of puffed rice, potato, onions and tomatoes with a mix of chutneys is a particular favorite of mine. Usually, the tokris are made with thinly sliced potatoes that are then deep fried.
Well, this Keto Tokri Chaat is the next best thing. Using simple ingredients, the baked tokris are easy to make. The Chutney is sweet, spicy and tangy. And the roasted pumpkin seeds on top provide the sev like texture.

Ingredients
To make the Tokris:
Almond Flour - 2 tbsp
Flax Meal - 2 tsp
Mozzarella Cheese - 2 tbsp (at room temperature)
Salt - 1/4 tsp or to taste
Chilli Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Jeera / Cumin Powder - 1/2 tsp
Ghee - 1/2 tsp
Green Chutney
Cilantro / Coriander - 1 cup
Mint / Pudina - 1/2 cup
Chilli - 1 to 2
Lemon juice - 2 tsp
Salt - 1/8 tsp or to taste
Sweetener of choice - 1 tsp (we used Stevia)
Water - 2 tbsp
Yogurt Mixture
Greek Yogurt - 2 tbsp
Salt - 1/8 tsp or to taste
Jeera / Cumin Powder - 1/2 tsp
Tokri Filling
Sprouted Moong bean - 3 tbsp
Bell Pepper - 1 tbsp, finely chopped
Cucumber - 1 tbsp, finely chopped
Tomato - 1 tbsp, finely chopped
Spring Onion - 1/2 tbsp, finely chopped
Roasted Pumpkin Seeds - 1/2 tsp
Method of Preparation
To make tokris
Pre-heat the oven to 400F (200C).
In a bowl, combine almond flour, flax meal, mozzarella cheese, salt, cumin powder, chilli powder and turmeric powder.
Add ghee and form a dough.
Using your fingers, wrap dough around a silicon cupcake liner. Make the tokris as thin as possible.
Bake for 5 to 7 minutes, until it is crisp.
Cool it completely and then remove from the linear.
This can be stored in a airtight container for upto 3 days.
To make Green Chutney
Add all the ingredients under green chutney and blend to form a chutney.
Make sure the chutney is thick.
Set aside.
To make Yogurt Mixture
Add greek yogurt to a bowl and whisk to form a smooth paste.
Add salt and cumin powder and mix well.
Set aside.
To make filling
In a bowl, combine sprouted moong bean, bell pepper, cucumber, tomato and spring onion.
Add 1 heaped tsp of green chutney and 1 tbsp of yogurt mixture.
Mix well.
Assemble
Add the moong bean mixture to each tokri.
Add a little yogurt mixture and green chutney.
Top off with roasted pumpkin seeds.
