Spiced Shortbread Cookies
These keto friendly butter cookies are egg-less and gluten-free. They only use almond flour, sweetener of choice, spices and butter. This is a healthy treat and just as amazing as the carb laden traditional Nankhatai.

Almond Flour - 1 cup
Swerve/Sweetener of Choice: 1/4 cup*
Salted Butter - 3 tablespoons softened to room temperature
Cardamom Powder - 1 tsp
Nutmeg - A pinch
Method of preparation
Preheat the oven to 350 F / 180 C.
Prepare a baking sheet lined with parchment paper.
In a mixing bowl, combine all ingredients, thoroughly mixing until resembling a dough.
Use the dough to form 1-inch balls, placing them on the baking sheet at least 2 inches apart. There should be about 12 balls.
Flatten each dough ball using a fork.
Bake for about 8 to 10 minutes, until the cookies are golden around the edges.
The cookies will be very soft when they come out of the oven. Let them cool completely before removing them from the baking sheet.
Store them in an airtight container.
* These cookies are mildly sweet and so if needed adjust the amount of sweetener to your taste.
Psst.... Add coconut sugar instead of sweetener and the cookie turns into a caramel delight.
