Keto Mumbai Pav Bhaji

Pav Bhaji is a very popular dish in India, liked by almost everyone. This dish is a delicious mix of veggies, spices and is usually paired with a dinner roll. Traditionally, this dish can get heavy on carbs since the base of the dish is potatoes . In our version, we have eliminated potato and used a plethora of veggies making this dish low carb, healthy and absolutely delicious. Serve this with our Keto Bread and quite honestly, this is an excellent way to get in all your nutrition in one go. "Pav Bhaji Masala" is easily available in any Indian store. Ingredients


  1. Cauliflower - 100 gms

  2. Cabbage - 50 gms

  3. Lauki/OPO squash - 100 gms

  4. Eggplant - 100 gms

  5. Tomatoes - 100 gms

  6. Ghee - 1 tbsp

  7. Cumin seeds - 1 tsp

  8. Onions - 75 gms

  9. Ginger Garlic Paste - 1 tbsp

  10. Peppers - 75 gms

  11. Pav Bhaji Masala - 1 tbsp

  12. Water - 1/4 cup

  13. Salt to taste

Method of preparation

  1. In your instant pot add cauliflower, cabbage, lauki/opo squash, eggplant, tomatoes and water.

  2. Close the lid and cook at manual pressure for 10 mins

  3. Once done, let the pressure release naturally

  4. Open the instant pot and blend all the veggies and set aside

  5. Set the instant pot in Saute mode

  6. Add the ghee and cumin seeds and saute for 30 secs

  7. Add the onions and saute for 1 minute

  8. Add the ginger garlic paste and saute for 30 seconds

  9. Add the peppers and pav bhaji masala and saute for 30 secs

  10. To this, add the blended paste and cook for few minutes

  11. Add salt to taste

  12. Plate this mixture with your keto bread, some chopped onions and enjoy a delicious meal.
