Crispy & Flavorful Bitter Melon / Bitter Gourd Chips - Keto Style
Bitter melon / bitter gourd have long been used to control diabetes. These chips are popular Indian tea-time snacks. Traditionally, these are coated in chickpea and rice flour and are deep fried. This baked snack is completely keto friendly, while packing in the same flavor punch. This recipe can be easily scaled up as required.

Bitter Melon / Bitter Gourd - 1.5 cups, thinly sliced
Coconut Oil - 2 tbsp
Turmeric Powder - 1 tsp
Chili Powder - 1 tsp
Asafoetida/Hing - 1/2 tsp
Salt to taste
Method of preparation
Whisk together coconut oil, turmeric powder, chili powder and salt.
Add the thinly sliced bitter melon / bitter gourd and ensure it is evenly coated with the oil mixture.
Let the bitter melon / bitter gourd marinate for at least 30 minutes.
Preheat the oven to 350 F / 175 C.
Line the baking tray with a parchment paper and evenly spread the marinated bitter melon / bitter gourd slices.
Bake for 15 minutes, then flip the slices and bake again for another 15 minutes.
Once it cools completely, eat it or store in an air tight container.
The more thinly sliced the bitter melon, the crispier it gets after baking.
Use your hands to massage the bitter melon and get it evenly coated with the oil mixture. This will help reduce some of the bitterness.
