Diabetic Friendly Keto Vada

Vada for your Sambhar and Chutney

Vada or Medu Vada is a popular South Indian breakfast or snack food. This is usually made with some variation of lentils and is deep fried in oil. In our recipe we have eliminated all the bad elements and just kept the crispy delicious of vada. Pair with with your low-carb, no lentil sambar and chutney and you have a guilt free meal idea for the taking.

Makes: 7 vadas

Prep Time: 5 mins Cook Time: 7-10 mins


  1. Grated Cauliflower - 300 gms

  2. Grated Paneer - 50 gms

  3. Psyllium Husk - 1 tbsp

  4. Green Chili - 1

  5. Pepper corns - 5 peppercorns coarsely ground

  6. Coconut Oil - 1 tbsp

  7. Salt to taste

Method of preparation

  1. Place the grated cauliflower in a cheesecloth and drain out as much of the water as you can.

  2. In a bowl add all the ingredients and mix well. You should be able to form a dough.

  3. Rest the dough for at least 10 minutes.

  4. Make equal sized balls. This should make 7 vadas.

  5. Cook the vadas in a paniyaram / appe / aebleskiver pan using about 1 tbsp of oil

  6. Alternately, you can also bake them at 350 F for about 10 mins.

  7. Add them to the sambar and enjoy it hot.
