Diabetic and Keto Friendly Vermicelli Upma
Semiya Upma with a healthy twist

Vermicelli Upma or Semiya Upma is a one of the everyday breakfasts in South India. Instead of using vermicelli/semiya which is high in carbohydrates, we used zuchini noodles (zoodles) thus making it a healthy and a low carb option. Customize this Upma to your liking by adding additional veggies and spices. Here we have kept it very simple using just basic tempering. The simplicity in our opinion enhances the flavors of the spices and zucchini. Make this at home and create your own variation.

Ingredients
Zucchini - 2 medium sized - 1 cup
For Tempering
Coconut Oil - 1 tsp
Red Chilli - 2
Curry leaves - 5
Mustard Seeds - 1/2 tsp
Hing - 1/4 tsp
Salt to taste
Method of preparation
Use a spiralizer to make Zucchini Noodles (Zoodles) and keep aside (If you do not have a spiralizer either julienne the zucchini or cut it length wise finely)
In a wok, heat the oil and then add all the other ingredients of the tempering and wait till it stops sputtering
Add the noodles and cook for about 1 minute. The zoodles should be al dente.
Add salt to taste
