Diabetic Friendly Coconut Barfi
A 15 minute Keto friendly sweet
One of the most popular sweets during the festival season is coconut barfi / coconut squares. While the primary ingredient is coconut, practically every family has its own take on how they make their coconut barfi. This is our version of the coconut barfi and it is completely keto friendly! With each piece being just 1g net carb, this makes the perfect keto dessert!

Fresh Coconut - 1 cup
Swerve/Sweetener of Choice - 1/2 cup
Heavy Whipping Cream - 1/4 cup
Powdered Cardamom - 1/4 tsp
Ghee - for greasing pan
Method of preparation
In a saucepan, add Fresh Coconut, sweetener and heavy whipping cream and saute until most of the heavy cream is absorbed (about 3 to 4 minutes).
Add cardamom powder and mix well.
Grease a plate or a dish with ghee and add the coconut mixture.
Spread out evenly and refrigerate for at least 10 minutes.
Cut into 8 equal squares.
Enjoy this delicious no guilt sweet. Store in the refrigerator for upto 5 days.
