A different take on a classic

This simple salad is warm, fresh, creamy, flavorful and so filing!

Ingredients
Cherry Tomatoes - 2 cups or 300g
Fresh Mozzarella Cheese - 80g
Avocado - 1/2 medium or 75g
Olive oil - 2 tsp
Fresh Basil - a handful, chopped
Lime - 3 tbsp
Black Pepper to taste
Salt to taste
Method of preparation
In a wok, add 1 tsp of olive oil. Once hot, add the tomatoes and saute till they are gently roasted.
Grind together Avocado, 1 tsp of olive oil, lime juice and salt. This is the avocado dressing.
In a bowl, gently combine roasted tomatoes, mozzarella, avocado dressing, basil and black pepper.
Enjoy a warm bowl of salad.
