Caprese Salad

A different take on a classic

This simple salad is warm, fresh, creamy, flavorful and so filing!

  1. Cherry Tomatoes - 2 cups or 300g

  2. Fresh Mozzarella Cheese - 80g

  3. Avocado - 1/2 medium or 75g

  4. Olive oil - 2 tsp

  5. Fresh Basil - a handful, chopped

  6. Lime - 3 tbsp

  7. Black Pepper to taste

  8. Salt to taste

Method of preparation

  1. In a wok, add 1 tsp of olive oil. Once hot, add the tomatoes and saute till they are gently roasted.

  2. Grind together Avocado, 1 tsp of olive oil, lime juice and salt. This is the avocado dressing.

  3. In a bowl, gently combine roasted tomatoes, mozzarella, avocado dressing, basil and black pepper.

  4. Enjoy a warm bowl of salad.
