Best Keto Paneer Biryani
A quick protein packed meal idea.
Biryani is a mixed riced dish spiced with flavorful herbs and spices and is served with a raita (yogurt mixture) on the side. This dish is especially popular throughout the Indian subcontinent, as well as among the diaspora from the region. Traditionally, this dish is made with basmati rice but here we have replaced the rice with "Cauli" Rice thus lowering the carb content quite dramatically. Ingredients
Hung Curd/Greek Yogurt: 1/4 cup
Onions - 50 gms + 25 gms for cooking
Bell Peppers - 100 gms
Paneer - 50 gms
Ginger Garlic Paste - 1 tsp
Biryani Masala - 1 tsp
Salt to taste
Ghee - 1 tbsp
Cumin Seeds - 1 tsp
Bay Leaves - 2
Cinnamon Stick - 1 inch
Black Cardamom - 1
Green Cardamom - 2-4
Cloves 2-4
Cauliflower Rice - 150 gms
Cilantro - Handful
Mint - Handful
Saffron Strings - A few
Method of preparation
Soak the strings of saffron in warm water and set aside
In a bowl, add the yogurt, biryani masala, salt and mix well
Add the onions, bell peppers, paneer and mix well
Set aside for 15 mins (longer the better) so that it marinates
Set the instant pot in Saute mode
When ready, add 1 tbsp to ghee
Add the cumin seeds, bay leaves, cinnamon sticks, cardamoms, cloves and saute for 30 secs
Add the chopped onions and cook till translucent
Now lets starts layering the Cauliflower Rice and marinated mixture
Layer 1 - Half of the Cauliflower Rice
Layer 2 - Half of the marinated mixture
Layer 3 - Handful of chopped cilantro and mint
Repeats layers 1, 2 and 3 again
Add the saffron water
Close the lid, set the vent in sealing
Pressure cook, Manual for 0 mins
Quick Release
Serve with Raita and Enjoy
